This isn't just a cooking class—it's an immersive experience into the heart of Mexican corn culture. We'll start with a captivating talk about why Mexican corn is so vital and why its heirloom varieties are rapidly disappearing.

From there, you'll dive hands-on into the ancient art of nixtamalization, the essential process that transforms corn into perfect tortillas. You'll get to grind your own heirloom corn on a metate, a traditional volcanic-rock grinding stone. Then comes the fun part: you'll make your own tortilla from scratch, cook it fresh on the comal, and turn it into a delicious quesadilla. To top it all off, you'll even create your own salsa using a molcajete.
